Gluten and Dairy Free Plum Pudding

Gluten and Dairy Free Plum Pudding
This is healthier alternative for the classic plum pudding. It contains lots of mixed dry fruits and plums. You can make this well ahead of Christmas and store in the fridge.
Ingredients
- 1 ¼ cup of sifted gluten free flour
- ¼ cup almond meal
- 3-4 plums, deseeded and chopped(preserved plums in juice)
- 2 eggs
- 1 cup of mixed dry fruits (Sultanas, dates, raisins, currants, cherries etc)
- 1/4 cup of rice bran oil
- 1/4 cup of coconut sugar
- 1/2 tsp. baking soda
- 1 cup rice or soy milk
- ½ tsp cinnamon powder
- ¼ tsp nutmeg powder
- 1 orange
- 1 small carrot, grated
The important thing to note is that all ingredients for the pudding need to be at room temperature.
- Extract the zest and juice from the orange.
- Use the juice to soak the dry fruits for 2-3 hours.(or you may use a microwave to warm up the juice and dry fruit mix and use it after 30 minutes)
- Mix the dry ingredients (flour, spices and baking soda) by passing them through a sieve/sifter couple of times.
- Dissolve the coconut sugar in milk.
- Add oil, zest and eggs to the milk and beat with a mixer/whisk
- Add the dry ingredients to the mix.
- Add the mixed dry fruits, grated carrots and plums to the mix.
- Mix all the ingredients.
- Oil a plum pudding dish or a round shaped dish.
- Pour the pudding mix in the dish.
- Cover the dish with its lid or an aluminum foil, closing all the ends tightly.
- In a large container, add water and bring it to boil
- Place the pudding dish over a trivet. Allow it to steam by covering the lid of the container. Their needs to be some space for the steam to escape from the top or the side of the container
- Ensure that enough water is available in the container so that ¼ of the container is filled with water at all times.
- Allow to steam over medium heat for around 3 ½ hours or until toothpick comes out clean from the center of the pudding
- Allow the pudding to cool outside the container for 1 hour.
- Once the pudding is at room temperature, remove the aluminum foil and let the pudding come out of the dish by inverting it over a plate.
- Serve with warm custard or refrigerate in a tight container. Once you refrigerate the pudding, you will be able to cut fine slices out of it..
